Following this vinicultural adventure, the Company meets as a family, to carry out the assembly of the wine during one to two days of tasting. Once they are selected, and they satisfy the discriminating taste of Éric Legrand, they are layed down in the cellars for a maturation period that is adapted for each vintage, and then they are disgorged with a low dosage liqueur, blended by Maison Éric Legrand. A range of "champagnes natures", honest and stamped with the hand and the mind of Éric Legrand has been born.
