The work continues in the vineyards with organic soil amendment, rigorous disbudding, minimal handling, and harvesting at the optimum maturity. Once again, in his quest for the sublime, Champagne √Čric Legrand is demanding in this requirement: his teams are well aware of the quality that is sought and only harvest the grapes that achieve that quality. Arriving in the pneumatic presses of 4,000 kg, the grapes deliver their juice: the vintages, and then the tails.
